We know the distinction between three color categories and five flavor categories. What about scents? It turns out that humans can detect 10 basic odors.
10 types of fragrances
Among the vast array of aromas, scientists have proposed 10 types of scents. The new system, developed by Jason Castro, includes
woody scents like pine or freshly cut grass. There are sweet scents like caramel, vanilla, and chocolate. Floral aromas and perfumes are in one group, citrus fruits in another, and other fruits in another.
Less pleasant odors, such as sour milk, gasoline, or rotten meat, have their own labels. The list is rounded out by minty aromas like eucalyptus and camphor, and the smells of roasted snacks—popcorn, almonds, or peanut butter.

complex aromas , like baked bread or freshly brewed coffee, are described as a combination of 2 or more of these 10 elements. This is similar to the way sounds are combined to create a chord.
Simplifying the olfactory category
Three basic color receptors are responsible for the three primary colors—red, blue, and green. Their combination results in any color our eyes see. Smells are more complicated. We have hundreds of olfactory receptors, so we should have 100 basic odors. Therefore, Castro simplified the odor category as much as possible.
Castro used the 1985 Atlas of Odor Character Profiles, which describes a standard set of odors. From this group, the researcher extracted 144 words, such as "fruity," "acrid," and "smoky," and looked for statistical relationships between them. Furthermore, using a mathematical method (simplifying olfactory information and assigning it to coherent categories), he narrowed the odors down to
10 basic aromas :
- nice,
- fruit (all except citrus),
- lemon,
- wooden/resin,
- sweet,
- mint,
- popcorn,
- chemical,
- biting,
- broken.
Smell is a rather tricky sense. Sight and hearing are often discussed in terms of types and patterns that most people understand. They can also be measured as specific physical phenomena. Smell is difficult to study in this way.
